반숙 만두라는 표현이 떠올랐다.

It reminded me of a runny-centered dumpling — crispy on the outside, soft and savory within.

만두에도 완숙, 반숙이 있다면 반숙은 이 집이 딱이다.

If dumplings had soft- or hard-boiled versions like eggs, this place would be the perfect spot for the soft-boiled kind.

서산 여행 중 만난 만둣집. 큰 기대 없이 방문했기에 그 감동이 더했던 집입니다. 군만두의 경우 인생의 만두라 칭할 정도로 예술이었네요. 흔히 얘기하는 숨은 고수, 숨은 맛집의 수식어. 이 집은 정말 어울리지 않나 생각이 듭니다.

I stumbled upon this dumpling place during my trip to Seosan, a city on the western coast of South Korea. With little expectation going in, the surprise and satisfaction were all the greater. Their pan-fried dumplings were truly next-level — easily some of the best I’ve ever had. If there’s such a thing as an unsung master or a hidden culinary gem, this place fits the bill perfectly.
